Cooking With Kids – Christmas Leftovers

In the post-Christmas wind-down, it’s an all-too familiar sight when we open the fridge to see mountains of leftover food! We thought we were feeding hundreds, but in reality, there weren’t that many (although there possibly seemed to be at the time!).

Now what do you do with the leftovers? Well, with the kids at home for the holidays, why not combine the two and get your children on kitchen duty with this simple but delicious recipe from Taste.com.au

Ham, Zucchini and Carrot Fritters

Ingredients
• 250g packet 90-second brown rice
• 1/2 cup self-raising flour
• 2 eggs, lightly beaten
• 1/2 cup reduced-fat milk
• 1 cup (165g) chopped leg ham
• 1 large carrot, peeled, grated
• 1 large zucchini, grated
• 4 green onions, thinly sliced
• 1/2 cup grated extra-light tasty cheese
• olive oil cooking spray
• 1/2 cup reduced-fat tzatziki dip
• 30g baby rocket or baby spinach
(Ideally you can add any leftovers you have in the fridge – exchange the ham for turkey, chicken or pork, add extra vegetables etc.)

Method 
1.  Cook rice following packet directions. Sift flour into a large bowl. Season with salt and pepper. Lightly whisk eggs and milk in a jug. Add to flour, stirring until smooth. Add rice, ham, carrot, zucchini, green onions and cheese. Stir to combine.
2.  Spray a 22cm (base) non-stick frying pan with oil. Heat over medium heat. Pour rice mixture into pan. Smooth surface. Cook for 8 to 10 minutes or until mixture begins to set and edges start to brown. Remove from heat.
3.  Preheat grill on medium heat. Place fritter, still in pan, under grill. Cook for 5 minutes or until light golden and set in centre. Use a spatula to loosen edges. Stand fritter in pan for 3 to 4 minutes before sliding onto a board. Cut into wedges.
4.  Arrange fritter on plates. Top with tzatziki and rocket and season with pepper. Serve.

Yayme! will continue its association with Variety the Children’s Charity in 2012 with sponsorship for The Melbourne Christmas Party for Special Children. The Melbourne party is reportedly one of the largest (if not the largest) annual Christmas parties for Special Children in the World today.

Variety do their very best to share the joy of Christmas with as many special needs children as they can and this year’s 2012 Variety Christmas Party for Special Children will be held in mid-December at the Melbourne Convention and Exhibition Centre.

In 2011 performers from the Kylie Show, a spectacular magic show by Cath Jamieson and the Variety Performance Group, singing many of the popular Christmas carols, along with a special visit from the man in red himself, Santa, visited and entertained more than four thousand children and their carers.

Children of all abilities were held captivated for hours with carnival rides and rock climbing, dancing, art and craft activities, and a petting zoo with lots of different animals that enjoyed as much attention from the children as the children did from the animals! The Variety Liberty Swing was also in use for those confined to wheelchairs or walking frames and was a feature of many of the children’s days. Children also had the opportunity to have their faces painted and enjoy lots of party food as you would expect at any children’s party!

With just on six weeks to Christmas, it’s time to think about parties and festivities and how to celebrate the Christmas season. Decorating your home for the festive season, and throwing a Christmas party will really get you in the spirit of the season. Use your Christmas décor to set the mood and add some glamour to your party.

Christmas Party Decoration Ideas:

  • Setting a theme, or choosing a colour scheme helps make decorating much easier. Popular Christmas themes include Santa, snowmen, angels, and nativity scenes. Colour schemes to use could be traditional green, red and gold, or mix it up with some white, silver, blue and purple.
  • Make sure that every corner of every room is decorated; each part of the room needs attention. Don’t forget to decorate your windows with “santa snow” or static stickers, tinsel and lights.
  • Music sets the mood for any party. Have a collection of Christmas CDs or download tunes onto your iPod and play Christmas music all evening.

Countdown To Christmas
